Fall apple dishes crisp, cool, sweet [hat]

Fall has arrived and there's so much to do: store patio furniture, unpack winter jackets, buy trick-or-treat candy and stockpile rock salt. OK, the pragmatist is in the house, but the first snowfall is sure to arrive later this month.

Luckily, we've been given a window of warm weather long enough for us to really enjoy the local apple harvest. There's nothing sweeter than a fresh-picked apple on a crisp fall day.

In Erie County, baskets of apples fill roadside markets and supermarket shelves while ladders dot area orchards. October is apple harvest time and a new crop is ready and waiting.

Whether you shred them, slice them, chop them or leave them whole, apples spell delicious fun in the kitchen. Loaded with flavor and well-suited to a variety of different preparations, this fruit never lets you down.

When purchasing apples, select fruits that are firm, bright-colored and free from defects such as bruises, skin breaks and decayed spots. The last thing you want to bring indoors is a swarm of fruit flies.

Many apples have a natural waxy coating that allows air to pass through it so the fruit doesn't turn mushy. Others have coatings applied commercially for storage and long-distance shipping. Either way, simply wash the apple before using.

If you visit a roadside market and you're not sure which variety to select, don't hesitate to ask for advice.

Local farmers know their crops and can tell you which apple makes the best crisp, pie, cider or out-of-hand snack.

Homemade applesauce is always an autumn favorite but one dish we like year-round. Whenever you have a few extra apples on hand, simply peel and slice them into a large glass measuring cup, add a little water along with water and cinnamon, microwave, and within minutes the apples are ready to mash and serve.

Always forgiving and seldom exact in measurement, you can make the sauce thicker or thinner by sampling adjusting the water and seasoning. For even better flavor, don't be afraid to mix apple varieties.
